Heart Healthy Spinach, Red Pepper, and Feta Quiche
- 1 frozen prepared pie shell
- 3 tablespoons extra-virgin olive oil
- 1 cup chopped onion
- 2 (4-ounce) jars chopped pimentos, excess liquid squeezed out
- 3 garlic cloves, minced
- 1 (10-ounce) package frozen leaf spinach, thawed, excess liquid squeezed out and chopped
- 8-10 oz Egg Beaters
- 1/4 cup grated Parmesan
- 1 cup milk (Skim or 1%)
- 2/3 cup (3 ounces) crumbled feta
- Preheat oven to 350 degrees F.
- Blind bake the crust: Line the pie shell with aluminum foil and weight it with pie weights or beans. Bake for 15 to 20 minutes until light golden brown.
- Increase oven temperature to 375 degrees F.
- In a large skillet, heat oil over moderate heat. Add onion and cook until softened. Turn up heat to moderately high. Add pimentos, garlic, and spinach and cook, stirring until just heated through. Drain off any excess liquid. In a bowl add Egg Beaters, Parmesan and milk. Add the spinach mixture and feta, and pour into the pie shell. Bake on a sheet pan in the middle of the oven.
Fresh Romaine Salad With Strawberries
(Serves Four)- 1 Qt Strawberries, cleaned and quartered
- 1/4 cup Superfine white Sugar
- 1/3 cup plus 2 Tablespoons Balsamic Vinegar
- 2 cups Romaine Lettuce
- 1/4 cup Shredded Romaine Cheese
- Toss all ingredients together in large salad bowl.
- Add Balsamic Vinegar.
- Chill for ten minutes and enjoy.
Fruit Parfait
(1 Serving)- 8 oz Plain Granola
- 8 oz Vanilla Yogurt
- 2 oz Orange or Lemon Juice
- 1 Tbsp Golden Honey
- 1 tsp Fine sugar
- 1/3 cup Banana, Diced
- 1/3 cup Fresh Strawberries, quartered
- 1/3 cup Fresh Blueberries
- 1/2 oz Toasted Almonds
- 1/2 oz Heavy Cream, whipped
- 1 Parfait Glass or Decorative Glass (For presentation purposes)
- Wash and clean all produce accordingly.
- Combine and soak honey, Lemon/Orange Juice, sugar, strawberries, blueberries, and bananas. Toss slightly and chill.
- Using parfait glass, carefully fold in ingredients into layers in glass for presentation (Granola, Yogurt, Fruit,), repeating the steps until the glass is full.
- Add small amount of whipped cream and almonds to top.
